This beloved pancake recipe has been a cherished tradition in our family for generations. Passed down from our three family restaurants (Treat Café, Re-treat Café & Treat Café &Bar & Restaurant- our restaurant slogan : "same same but different ) in the Hoi An Old Quarter. My uncle Triet met up with two British man named Mark & Patrick and they help my family open our first restaurant in Hoi An Old Quarter.
These fluffy pancakes are a comforting classic. The secret to their perfection lies in the perfect balance of white sugar and fresh eggs ingredients, whisked together with stable speed until just combined. Whether topped with a drizzle of pure maple syrup, a dollop of whipped cream, or a sprinkle of fresh berries, these pancakes are sure to satisfy any sweet tooth.
Pancake Recipe
Serves: 2 portions
Ingredients:
2 whole eggs, at room temperature
2 tablespoons sugar
2 tablespoons wheat flour
Vegetable oil
Your favorite fruit (optional)
Toppings: honey, maple syrup, butter, fresh fruit
Instructions:
Beat the eggs: In a bowl, beat the eggs and sugar together until the mixture becomes light and fluffy, about double in volume.
Combine flour: Gently fold in the wheat flour until the batter is smooth. To check if the batter is ready, drop a spoonful onto the back of a spoon. If the batter clings to the spoon, it's ready.
Cook the pancakes: Heat a non-stick pan over medium heat. Add a thin layer of vegetable oil. Pour a ladleful of batter onto the hot pan. You can add sliced fruit like banana or pineapple to the batter before cooking, if desired.
Flip and serve: Cook until golden brown on both sides. To check if the pancake is cooked through, insert a toothpick into the center. If it comes out clean, the pancake is ready.
Top and enjoy: Serve immediately with your favorite toppings such as honey, maple syrup, butter, or fresh fruit.

Note: Use vegetable oil at room temperature. Pour a reasonable layer of oil into a non-stick pan and add pancake batter, heat it over medium heat and check very frequently and upside down the pancake when the bottom is form and turn into yellow.
